Potato Loaf

This is exactly what it sounds like: a potato loaf.  I was experimenting with side dishes and thought this would be a fun one to try.

2 baking potatoes, scrubbed clean
1/2 stick of butter
1 tablespoon minced garlic
1/2 red onion, minced

Seasonings of your choice (I added cracked black pepper, basil, and parsley)

Preheat oven to 400 degrees.

Slice the potatoes into thin slices.

Layer potato slices in a loaf-shaped baking pan.

In a saucepan, simmer all ingredients except potatoes on medium.  Pour over potatoes and cover pan tightly with foil.  Bake for 40 minutes.

The trick to the potatoes staying firmly together after baking is to allow it to cool.  I served this alongside meatloaf, and it was a hit.
