Bruschetta

Bruschetta

3 tomatoes
1 small onion
Fresh Basil
Fresh Parsley
Extra V Olive Oil
Balsamic Vinegar
French Bread or Baguette
Mozzarella cheese

Preheat oven to 400 degrees.

Finely dice the onion and tomato (remove seeds). Mince basil and parsley and mix with diced ingredients. Add 1 tablespoon each of the oil and balsamic vinegar. Mix well and seal in a closed container or bag; set aside.

Cut bread to 3/4″ slices. Brush with olive oil and place on baking sheet, oil side down. Spoon a generous amount of the mixture on top of the bread, cover with mozzarella, and bake until the cheese is melted.
